Velocipede Vin d'Orange

This sixteen-bottle batch of Vin d’Orange was made by infusing a few gallons of rosé with sour oranges (a mix of Seville oranges from Monterey Market and Chinotto oranges from an Oakland back yard), sugar, vanilla bean, and a neutral spirit. After 40 days the tartness and bitterness were about right, and it was filtered, bottled, and set aside to age for 6-12 months.
